Instructions

Step 1
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil. You could also use a Pyrex baking dish.
Step 2
Prepare the marinade: In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, minced garlic, smoked paprika, and a pinch of salt and pepper.
Step 3
Marinate the chicken: Pat the chicken dry and place it in a large bowl or zip-top bag. Pour half of the marinade over the chicken, reserving the rest for later. Toss to coat and let it sit for 10–15 minutes.
Step 4
Arrange on the baking sheet: Place the chicken on the sheet.
Step 5
Roast for 30–35 minutes. The chicken should reach an internal temperature of 165°F (74°C).
Step 6
Put leftover marinade in a small saucepan and boil for at least 2 minutes to kill any bacteria, then bring to a simmer to let it thicken up.
Step 7
Serve: Plate the chicken, drizzling the cooked marinade over the top for extra flavor.
