Instructions

Step 1
Boil udon noodles: If udon noodles are frozen: bring pot of water to boil. Cook udon noodles until separated about 2-3 minutes. Reserve 1 cup of the water. Drain and rinse with cold water. Set aside.
Step 2
Crisp Bacon: Heat a large pan and add roughly chopped bacon. Cook to preferred crispiness occasionally stirring. Set aside and reserve the bacon grease.
Step 3
Time to cook: In the same pan, add diced onion and minced garlic to heated bacon grease. Cook for about 2-3 minutes then add shiitake mushrooms. Cook for another 2-3 minutes. Reduce heat to medium-low and pour heavy whipping cream in. Add gochujang, gochugaru, and soy sauce; mix until fully combined. Gradually add reserved water until sauce reaches your desired consistency. Add freshly grated parmesan cheese and a slab of butter. Mix again. Add udon noodles and mix until fully combined.
Step 4
Final touches: Garnish with crisped bacon, green onion, and freshly grated parmesan.
