Instructions
Step 1
1 Heat olive oil in a pot over medium-high heat.
Step 2
Add chicken and sear both sides until browned, about 2-3 minutes per side.
Step 3
Transfer out of pot and place in slow cooker.
Step 4
2 Add onion to the same pot and cook until softened, about 4-5 minutes.
Step 5
3 Add garlic and cook until fragrant, stirring occasionally, about 30 seconds.
Step 6
4 Add coconut milk, tomato paste, flour, garam masala, curry powder, chili powder and ginger. Season with salt and pepper. Stir to combine. Cook until thickened, about 1-2 minutes.
Step 7
5 Transfer sauce out of pot and place in slow cooker. Stir to combine. Cover and cook until tender, about 5 hours on low.
