These Lemon Chia Muffins are light and springy, pleasantly plump, and make me want to settle into a porch swing with a cup of tea.

4 Tbsbutter

1 cupwheat flour

1 cupwhite flour

1 tspbaking powder

¼ tspbaking soda

½ tspsalt

½ cuphoney

⅔ cupgreek yogurt
vinegar

water

2eggs
large

2 tsplemon zest

¼ cuplemon juice

1 tspvanilla

⅛ tspalmond extract

2 Tbschia seeds

Instructions
Step 1
Preheat to 350, and lightly coat muffin tins with nonstick spray
Step 2
Melt butter
Step 3
In a large mixing bowl, whisk together the white whole wheat flour, all-purpose flour, baking powder, baking soda, and salt
Step 4
Mix the butter, honey, greek yogurt, eggs, lemon zest, lemon juice, vanilla, and almond extract in a different bowl
Step 5
Make a well in the dry ingredients. Pour in wet ingredients, then stir and add in the chia seeds. It will be thick.
Step 6
Put batter in muffins tins (3/4ths the way full).
Step 7
Bake for 18 to 22 minutes
Step 8
Let cool
