Step 1
Heat a little oil in a cast iron skillet on medium heat until it got that sizzle
Step 2
Season chicken drumsticks to taste with all spices except oregano and onion (those come later)
Step 3
Sear chicken drumsticks until browned or blackened on all sides, about 5 min per side for 12-15 min or so
Step 4
Throw corn in until roasted. throw in green chiles, onion and a sprinkle of oregano.
Step 5
Immediately pour in chicken broth or beer, whichever using, then cover and lower heat to med-low or low
