Ingredients
4 servings
150gIsraeli couscous
or fregola
4 Tbsextra virginity olive oil
350ghot smoked salmon
300ggreen beans
2 tablespoonspommegrante molasses
2 Tbsplemon juice
1red chilli
finely choppe
½ tspsalt
3 Tbspcoriander
chopped
2 Tbspmint
chopped
¾ cupwalnuts
toasted, skin removed after roasting
Instructions
Step 1
Cook.couscous in lightly salted water then toss through 1 Tbsp olive oil.
Step 2
Remove skin and any bones from salmon. Mop up extra oil with paper towel. Flake.
Step 3
Cook beans until tender, refreshing in ice water then drain on paper towel.
Step 4
In bowl mix pommegrante molasses, lemon juice, the rest of oil, chilli and salt. Mix half through couscous. Add herbs to other half of dressing.
Step 5
Spoon couscous into large bowl put salmon and beans on top. Scatter with walnuts then spoon rest of dressing over.
