Instructions

Step 1
Heat 1 tablespoon of the oil in a large skillet over medium-high heat until shimmering.
Step 2
Sprinkle the shrimp with the coriander, cayenne, and ¼ teaspoon salt.
Step 3
Add to the hot oil and cook, stirring, until lightly browned and just opaque, 2 to 3 minutes.
Step 4
Transfer the shrimp to a plate.
Step 5
Heat another tablespoon of oil in the same skillet.
Step 6
Add the sweet chiles, jalapeños, and ¼ teaspoon salt. Cook, stirring occasionally, until crisp-tender, 1 to 2 minutes.
Step 7
Transfer to the plate with the shrimp.
Step 8
Heat the remaining tablespoon of oil in the same skillet. Add the leeks, garlic, and a pinch of salt. Cook, stirring occasionally, until the leeks are lightly browned and crisp-tender, about 3 minutes.
Step 9
Add the shrimp, chiles, and chopped cilantro and mix well.
Step 10
Serve with cilantro leaves for garnish
