One Bowl Baked Chicken Nuggets

Instructions

Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper; set aside.
Step 2
Place chicken in a large bowl and toss with flour and salt. Add egg, mayonnaise, honey, and mustard to the bowl. Mix until chicken is fully coated.
Step 3
Add cornflake crumbs and breadcrumbs to the bowl; mix to fully coat chicken.
Step 4
Spray prepared baking sheet well with cooking spray. Spread chicken nuggets in a single layer, making sure they don't touch. (Use two sheets if needed.) Spray the tops of the chicken well.
Step 5
Bake for 10-15 minutes, until chicken is cooked through.
Step 6
Serve with honey-mustard dipping sauce, if desired.

Plan ahead: This chicken is best fresh, but it can be prepared up to two days ahead and rewarmed, uncovered. Tip: You can use all cornflake crumbs or all breadcrumbs instead of half and half.
