Yogurt Coconut Chicken (Digaag Qumbe)

Traditionally, the chicken is cooked separately and is added to the pot in the last ten minutes or so of cooking. In order to simplify the dish, we cooked everything in one pot. For this dish, we prefer using chicken thighs instead of chicken breast. The dark meat stays moist and tender for a longer period while it becomes infused with all the flavours of the curry.
