Grilled Veg & Feta with Spiced Yogurt Dressing

Ingredients
4 servings
Grilled Vegetables:

2zucchinis
medium, sliced into 1/2-inch planks

1eggplant
large, sliced into rounds

2red bell peppers
quartered, seeds removed

1red onion
cut into wedges

1 cupcherry tomatoes
left whole

200gfeta cheese
cut into 4 thick slices

Olive oil
for brushing
Spiced Yogurt Dressing/Marinade

½ cupnon-fat Greek yogurt

¼ cupolive oil

6garlic cloves

2red Fresno chilies
seeded, adjust to 1 for milder

0.5habanero
Optional, seeded, omit for no heat

½ cupred bell pepper
diced

1 Tbspsmoked paprika

1 Tbspfresh thyme

1 tspcayenne
reduce to 1/2 tsp if sensitive

1 ½ tspkosher salt

1 tspblack pepper

½ tsponion powder

¼ cupsherry vinegar

2juice of lemons
To Serve:
Instructions
Step 1
Blend all marinade ingredients (yogurt through lemon juice) until smooth. Divide into two portions: Marinade portion: ¾ cup (for veggies) Serving portion: ¼ cup (reserve in fridge for drizzling later)
Step 2
Toss zucchini, eggplant, bell peppers, and red onion in the ¾ cup marinade. Let sit 20-30 mins (no longer, to avoid sogginess).
Step 3
Keep cherry tomatoes and feta separate (marinade too acidic for tomatoes; feta will be added later).
Step 4
Preheat grill to 200°C (400°F).
Step 5
Veggies: Shake off excess marinade. Grill 4-5 mins per side until charred and tender. Remove to a platter.
Step 6
Cherry Tomatoes: Thread onto skewers or use a grill basket. Grill 2-3 mins until blistered.
Step 7
Feta: Brush lightly with olive oil. Grill 1-2 mins per side JUST until warm (to prevent melting).
Step 8
Arrange grilled veggies and tomatoes on a platter. Nestle warm feta slices among them. Drizzle with the reserved ¼ cup dressing and sprinkle with fresh herbs.
Step 9
With bread for scooping. Add a side of lemon-dressed couscous or farro if desired.
