Instructions

Step 1
roughly chop your tomatoes, then peel and chop your shallots and garlic. Then place the in to your oven proof dish. Spray with olive oil and cook in the air fryer on 190c for 10 to 12 minutes or until the onions and tomatoes are soft.
Step 2
So half way through the cooking time, open up the air fryer drawer and add in your diced chorizo, Worcestershire sauce and Tobasco sauce. Then stir well and close the air fryer drawer again.
Step 3
Then whilst the vegetables finish cooking, prepare your stock using 400ml of boiling water and a jelly stock cube. I like to use chicken stock but you can also use a vegetable stock cube if you prefer.
Step 4
Once cooked, carefully remove the dish from the air fryer. Then blitz your vegetables and stock in a blender until the soup is smooth.
Step 5
Serve your air fryer tomato soup hot with a dollop of crème fresh, a handful of basil leaves and my warm crusty bread
