Air Fryer Tandoori Chicken

Instructions

Step 1
start by placing the two whole chicken breasts into a mixing bowl and add one tablespoon of olive oil. Wearing gloves, mix together well with your hands so that the oil coats all of the chicken. Then add a tablespoon of tandoori spice rub to the bowl and mix until the chicken is evenly coated. But if you have time, it is better to prepare the chicken in advance and leave it marinating in the fridge for at least an hour to intensify the tandoori flavour.
Step 2
Then place your two chicken breasts in the air fryer drawer. I like to use a silicone mould so that my air fryer stays clean. A disposable tin foil tray or oven proof dish will work just as well. Then cook your chicken for 20 minutes on 190c. Remember to turn the chicken breasts half way through the cooking to ensure they are evenly cooked.
Step 3
So whilst the spiced chicken breasts are cooking, lay some mini poppadom out on to a serving plate. Add a teaspoon of mango chutney and some red onion pickle on to each mini poppadom.
Step 4
Remove the chicken from the air fryer and leave to rest for five minutes. Then once cooled slice your air fryer tandoori chicken breasts and place one slice onto each poppadom. Next add some yoghurt raita on top of the chicken.
