Ingredients
8 servings
1 lbground beef
1 lbground pork
1 ½ teaspoonsalt
½ teaspoonblack pepper
3garlic cloves
minced
1sweet onion
diced
1poblano pepper
diced
2 tablespoonschili powder
1 tablespooncumin
1 teaspoondried oregano
1 teaspoongarlic powder
1 x 15 ozkidney beans
drained rinsed
1 x 15 ozblack beans
drained rinsed
1 x 15 ozred beans
or another can kidney beans, drained/rinsed
10 ozroasted diced tomatoes
30 ozroasted diced tomatoes
30 oztomato sauce
2chipotle peppers in adobo sauce
1 tablespoonadobo sauce
1 tablespoonworcestershire sauce
1 tablespoonliquid smoke
1 tablespoonfish sauce
½ tablespoonsoy sauce
pepperoni
Optional, cubed, or chopped cooked bacon
Instructions
Step 1
* Heat a large skillet over medium heat. Add the ground beef/pork and break up. Season with salt and pepper.
Step 2
* Add in the poblano pepper, onion, and garlic. Cook for 4 to 5 minutes, until you can no longer see pink. Add in all other seasonings and cook for 30 more seconds, stirring constantly. There is no need to cook the beef/pork all the way through. Drain the fat from the skillet, if needed.
Step 3
* Add the beef mixture to the slow cooker. Add in all the remaining ingredients to crockpot and mix together.

Step 4
* Cook on low for 8 to 10 hours or on high for 4 to 5 hours. Serve with diced red onion, corn chips, sliced jalapenos, shredded cheese, sour cream, and fresh cilantro.
