Instructions

Step 1
Slow Cooker Method:

Add Ingredients to Slow Cooker – Place the whole chicken breasts, diced onion, diced carrots, diced celery, garlic powder, dried parsley, salt (12M+) black pepper, and chicken broth into the slow cooker.
Step 3
Cook – Cover and cook on low for 5-6 hours or high for 3-4 hours, until the chicken is tender and shreds easily (and reaches 165 degrees F internal temp).
Step 4
Shred Chicken & Add Cream Cheese – Remove the chicken, shred it with two forks, and return it to the slow cooker. Stir in the softened cream cheese (or heavy cream) until melted and smooth.
Step 5
Toss with Egg Noodles – Cook egg noodles according to package instructions in a pot on the stove. Drain, then stir them into the slow cooker or serve the creamy chicken mixture over the noodles.

Stove-Top Method:

Sauté Vegetables – In a large pot or Dutch oven, heat 1 tablespoon of oil over medium heat. Add the onion, carrots, and celery, sautéing for about 5 minutes until slightly softened. Remove from the pan and set aside.
Step 8
Cook Chicken – Cut each chicken breast in half lengthwise (so it is no more than 1/2" thick), this will speed up the cooking process. Season the chicken breasts with garlic powder, salt (12M+), black pepper and dried parsley. Drizzle 1 tbsp oil into the pan and cook the chicken breasts on both sides for 5 minutes on each side on medium low heat. Add the veggies back to the pan along with the chicken broth. Bring to a gentle boil, then reduce to a simmer. Cover and cook for 10-15 minutes, until the chicken is cooked through and shreds easily. Ensure chicken reaches 165 degrees F. While the chicken cooks, boil water for noodles.

Shred Chicken & Add Cream Cheese – Remove the cooked chicken, shred it with two forks, and return it to the pot. Stir in the cream cheese until melted and combined.

Toss with Egg Noodles – Cook the egg noodles separately according to package instructions, then stir them into the pot or serve the creamy chicken mixture over them.
