Step 1
Add turkey sausage and 8 oz of mushrooms to a food processor and chop/blend. Set aside
Add all remaining ingredients to a blender and blend until smooth.
Add a spoonful of sausage/mushroom mixture to each opening in a cupcake pan (use silicone cupcake wrappers for easy removal/cleanup).
Pour the egg mixture over the sausage/mushroom mixture and then use a fork to mix to ensure full coverage and even distribution. This will help the muffin not separate. Bake at 350 for 30 minutes or until muffin is bouncy/firm.
