Ingredients
4 servings
1white onion
medium size, chopped
1red onion
medium size, chopped
4garlic cloves
1 tspgarlic
minced
butter
oil
1 cupyellow lentil
washed
2tomatoes
medium size, chopped
1potato
medium size, chopped
1carrot
medium size, chopped
1courgette
medium size, chopped
1green chili pepper
chopped
water
celery salt
black pepper
turmeric powder
ground coriander
1cube vegetable stock
0.5cube chicken stock
paprika
7 spices
salt
Instructions
Step 1
Sautte the onion, garlic cloves and minced garlic in butter and oil
Step 2
Add ground coriander and sautte for 1 more minute on medium low heat
Step 3
Add the rest of the vegetables and sautte for a couple more minutes
Step 4
Add the lentil, and vegetable and chicken stock
Step 5
Add enough water to cover all the vegetables and bring to a boil until all the vegetables are fully cooked
Step 6
Add the spices and use the hand blender to blend all the vegetables into a puree
Step 7
Add some more water to make it lighter and bring to a simmer
Step 8
Serve with fried pita and croutons
