If the mixture is too dry, add a bit more maple syrup; if too wet, add a touch more almond flour. 2. Prepare the Date Caramel Filling: - In a food processor, blend the pitted dates, warm water, peanut butter, and a pinch of salt until smooth and creamy. - If needed, add more water, a teaspoon at a time, to achieve a spreadable consistency. 3. Assemble the Rolls: - Place the dough between two sheets of parchment paper. - Roll it out into a rectangle approximately ¼-inch thick. - Spread the date caramel evenly over the rolled-out dough. - Using the parchment paper to assist, carefully roll the dough into a tight log, starting from one of the longer edges. - Once rolled, wrap the log in the parchment paper and refrigerate for at least 1 hour to firm up. 4. Slice and Serve: - After chilling, unwrap the log and slice it into 1-inch thick rolls. - Arrange the rolls on a serving plate. - Optional: Drizzle with melted dark chocolate or sprinkle with crushed peanuts for added texture and flavor.
