Instructions

Step 1
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or lightly grease.
Step 2
Mix wet ingredients: In a large bowl, mash the bananas and whisk in the coconut cream, eggs, maple syrup, and vanilla.
Step 3
Combine dry ingredients: In another bowl, mix oat flour, flaxseeds, pumpkin seeds, baking soda, baking powder, cinnamon, and salt.
Step 4
Mix together: Gradually fold the dry ingredients into the wet mixture until just combined. Fold in walnuts or chocolate chips if using.
Step 5
Scoop & bake: Divide batter evenly into the 12 muffin cups, filling each about ¾ full.
Step 6
Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
Step 7
Cool & enjoy! Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
