Instructions
Step 1
Cook quinoa, set aside to cool
Step 2
Combine all dressing ingredients and whisk.
Step 3
Put chickpeas, onion, pomegranate, peanuts, coriander and mango in a bowl, add quinoa and dressing, mix.
