Thai Rice Tofu Bowls with Peanut Sauce

Step 1
Preheat oven to 400f. Drain the tofu and cut into small cubes. Place tofu in a ziploc bag with 1 Tb of soy sauce and the juice from half a lime. Let marinate for 15-20 minutes

While the tofu marinates, cook the rice
Step 3
Lightly grease a baking sheet and pour the marinated tofu, spread out the pieces evenly so they aren't touching. Season with salt and pepper to taste. Bake for 25 minutes, flipping halfway, or until desired crispness.
Step 4
Prepare the sauce: add soy sauce, peanut butter, honey, rice vinegar, and sesame oil to a small saucepan over medium heat. Stir well until mixture is bubbling and thickens. If needed, add cornstarch to thicken or water to thin.
Step 5
Toss the sauce, coleslaw mix (uncooked) and sauce together and serve over the rice.
