Instructions

Step 1
Start by draining the tofu well, and combine the juice of 1 lemon, half of your mint, oregano, and garlic, nutritional yeast, olive oil, and salt and pepper in a bowl. Place the tofu in the marinade for as long as possible, at least 30 minutes!
Step 2
For the slaw, simply combine all ingredients in a bowl, mix, and refrigerate until ready to serve.
Step 3
Place a pan on low heat and add the maple syrup for the hot “honey”. When it starts to bubble, add the chilli and gochugaru flakes, and leave to infuse for 5 minutes, stirring regularly. Add the gum at the end, and mix in well until the mixture starts to thicken. Pour into a jug and set aside.
Step 4
Preheat air fryer to 375 degrees, and add the tofu patties to bake for 20 minutes, flipping halfway.
Step 5
Mix the panko breadcrumbs and sesame seeds together in a bowl. Combine the flour, remaining seasonings, and water in a different shallow bowl.
Step 6
When the tofu is cooked, leave to cool and slightly dust with a bit of flour. Dip each piece in the wet mix, then the dry mix, until both patties are fully coated.
Step 7
Either coat with a little oil and airfry for 15 minutes, or shallow fry for 5, flipping halfway through. If you use the same pan that you used to make the hot honey, you get delicious caramelized edges on the tofu!
Step 8
Assemble your burgers with the tofu, brioche, spicy mayo, slaw, hot honey, and enjoy!
