Air Fryer Halloumi

Crispy halloumi and sweet potatoes with roasted veggies and a honey dressing makes the perfect healthy lunch. So easy, so delicious, and all made in the air fryer!

Instructions

Step 1
Peel and chop your sweet potatoes into small cubes and add to a bowl. Then spray with oil and toss until all are coated in oil. Next, sprinkle over your paprika, making sure each one is fully covered in the seasoning. Then set aside.
Step 2
Next, slice your halloumi cheese lengthways into strips and spray each side with oil. Add the halloumi and sweet potatoes directly on to your air fryer basket, leaving the crisper trays in. Set the temperature to 190c and cook for 5 to 6 minutes, or until your potatoes are beginning to crisp and your halloumi is starting to brown slightly on the edges.
Step 3
While they are cooking, de-seed your red pepper and slice length ways. And after around five minutes of the potatoes and halloumi cooking, add your peppers to the air fryer. Turn the halloumi and shake the potatoes, and cook for a further 3 to 4 minutes.
Step 4
Then add your asparagus to the basket and cook for a further 3 to 4 minutes or until the veg is cooked and the potatoes and halloumi are a lovely golden brown colour.
Step 5
Mix your honey and red chilli flakes together in a bowl and pour the dressing over your halloumi and vegetables.
Step 6
Spread your spinach on a plate and pop the rest of the ingredients on top
