Skillet Chicken with Sweet Potato and Asparagus

0.5 poundboneless skinless chicken breast
1clove of garlic
canola oil
salt
lemon pepper seasoning
1sweet potato
medium
¼ cupwater
1 ozchicken stock concentrate
0.5 poundfresh asparagus
pepper
crushed red pepper

Instructions
Step 1
Mince garlic. Cut the chicken into 1" pieces, and season with salt and lemon pepper seasoning.
Step 2
Heat a drizzle of oil in a cast iron skillet over medium heat. Add the garlic and chicken.
Step 3
Sauté the chicken, stirring well, for about 7-10 minutes or until it is cooked through. Set the chicken mixture aside.
Step 4
Meanwhile, peel and dice the sweet potato.
Step 5
Heat another drizzle of oil in the same skillet, add the sweet potatoes. Cook for about 7-10 minutes or until the sweet potatoes are crisped and cooked through.
Step 6
Add the asparagus, water, and chicken stock concentrate. Cover and cook for about 4-5 minutes until tender.
Step 7
Return the chicken to the pan, and stir to combine thoroughly.
Step 8
Season with salt, pepper, and crushed red pepper. Serve with rice.
Step 9
I'd recommend your favorite hot sauce at the table to complete the dish.
