Ditch those instant noodles and make this quick
and easy lunch instead. With layers of creamy peanut butter, saltiness from the soy sauce and a balanced heat from the sriracha, this dish is packed full of flavour. For additional protein, chicken and lean beef mince suit this recipe and, if you have the time, you can throw in some red pepper for added crunch.

Instructions
Step 1
Add the noodle nests to a pan of boiling water and cook according to the packet instructions
Step 2
In a bowl, Mix together the peanut butter, light soy sauce, sriracha, vinegar, honey and 2 tablespoons of boiling water
Step 3
Add the sesame oil to a frying pan over a medium heat, the add the ginger and garlic purees and fry for a minute until fragrant. Add the peanut sauce, followed by the water and stir until the sauce had loosened
Step 4
Add the noodles to the pan, followed by the dark soy sauce.Toss to combine, stirring through half of the spring onions.
Step 5
Serve in bowls, garnished with the remaining spring onions, the crispy onions and chilli flakes, if using.
