Instructions
Step 1
Melt the butter in a large pot over medium high heat.
Step 2
Add the onion, shallots, celery. Cook until soft.
Step 3
Add the carrots and cabbage.
Step 4
Stir and cook for 5-8 minutes.
Step 5
Add the vegetable broth and bay leaf.
Step 6
Bring to a boil. Stir occasionally.
Step 7
Once boiling, reduce the hear to simmer. Do this for 20 minutes.
Step 8
Add the potatoes and simmer for another 15 minutes until the potatoes are tender.
Step 9
Increase the heat and add the tomatoes . Bring to a boil.
Step 10
Reduce the heat again and simmer for 15 minutes.
