Grilled Cheese and Tomato Soup (Soup Maker)

Step 1
Preparation: Chop and peel the onion and carrot.
Chop the celery
Roughly chop the tomatoes and place to one side
To make vegetable stock, pour boiling water into a measuring jug to the 900ltr/ 31.6floz Then add the vegetable stock cube and stir until dissolved.
Step 2
Method: Place the olive oil in the removable vessel, fit the lid, select Sauté and press Start. After 1 minute carefully add the onions, carrot and celery refit the Lid and sauté for 3 minutes, stirring occasionally with a wooden spoon.
If you don't have the sauté function on your soup maker, then sauté the ingredients in a pan on your hob.
Add the fresh, chopped tomatoes and tinned tomatoes and stir to combine for 1 minutes.
Add the sugar, thyme, and vegetable stock and gently stir
Put on the lid and select smooth setting and let your soup maker do the rest.
When the soup is done lift the lid and season to taste with salt and pepper and sprinkle over basil.

Step 3
Preheat a nonstick skillet over medium heat.
Step 4
Butter Bread: Generously butter one side of a slice of bread.
Step 5
Place in Skillet: Place the buttered bread slice butter-side down in the hot skillet.
Step 6
Add Cheese: Add 1 slice of cheese on top of the bread in the skillet
Step 7
Top with Second Slice: Butter a second slice of bread on one side and place it butter-side up on top of the cheese.
Step 8
Cook and Flip: Cook the sandwich until the bottom slice is lightly browned. Flip it over and continue cooking until the cheese is melted.
Step 9
Repeat: Repeat steps 2 through 6 with the remaining 2 slices of bread, butter, and the second slice of cheese.
