Instructions

Step 1
Heat a tablespoon or olive oil in a large pan over medium heat. Add the chopped onion and sauté for 10-15 minutes until golden.
Step 2
Stir in the grated ginger and fry until aromatic (about 2 minutes)
Step 3
Add the diced sweet potato to the pan and stir well to coat with the onion mixture.
Step 4
Add the garlic and fry for 1 minute.
Step 5
Pour in the tinned tomatoes and add the two cups of stock; stir to combine. Season.
Step 6
Brings the mixture to a gentle boil, then reduce to simmer. Let the sweet potato cook for about 8-10 minutes, until it starts to soften.
Step 7
Stir in the orzo for 8-10 minutes, stirring occasionally until tender. Add more water, a little at a time, if it gets too thick.
Step 8
Gently fold in the drained tinned tuna and heat through for 2 minutes. Taste and adjust seasoning as needed.
Step 9
Spoon into bowls.
