Ingredients
9 servings
1 poundground italian sausage
0.5white onion
or yellow, diced
32 ouncesbeef stock
or broth
2potatoes
medium, peeled and diced, Or one turnip for low carb
2carrots
medium, peeled and diced
½ cupfennel bulb
chopped
14.5 ouncescan diced tomatoes fire-roasted

2 tablespoonstomato paste
1 tablespoongarlic
minced
1 teaspoonthyme dried
1 teaspoonoregano dried
½ teaspoonblack pepper
1 teaspoonfish sauce
½ tablespooncrushed red pepper
2 cupscollard greens

Instructions
Step 1
Add your ground meat to a soup pot. Add in your onion. Cook on medium high, stirring occasionally, until meat is browned.
Step 2
Add in all other ingredientse except the collards. Stir. Cover and simmer for 20 – 25 minutes.
Step 3
Add in chopped collard greens and cook until well wilted. Salt and pepper to taste.
