Ingredients

3 tablespoonsvegetable oil

1onion
large, finely chopped

4cloves garlic
finely chopped

green chilli
thinly sliced or a large pinch chilli flakes

1lemon
zest and juice of
200gdeveined prawns
shelled, thinly sliced

400gcan crushed tomatoes in juice

400mlcan coconut cream

1 handfulcoriander
leaves and stalks, coarsely chopped
Instructions
Step 1
Heat oil in a wide saucepan over moderate heat. Add the onion, garlic, chilli & zest. Fry gently for about 10 mins until onion is lightly browned.
Step 2
Add the prawns, then tomatoes, mix well, bring to the boil.
Step 3
Add the coconut cream and coriander and mix well. Bring almost to the boil but don’t boil in case it curdles.
Step 4
Add the lemon juice. Taste and season with salt & pepper.
