Spicy peanut noodle soup

This is a creamy noodle soup with a taste of peanut butter and sting of chili. If you happen to have a splash of coconut milk left in the fridge, it will be a good addition! But you can do without it too.

Instructions

Step 1
1. Chop the garlic and chili, and shred or chop the vegetables.
Step 2
2. Heat oil in a saucepan, add garlic and curry paste / chili chop and fry until garlic is soft. Add the vegetables and possibly a little more oil and fry for a few minutes.
Step 3
Turn on the water and bring to the boil. Add peanut butter and stir so that it dissolves in the soup base. Add the noodles and cook according to the instructions on the package.
Step 4
4. Taste with soy sauce, lime juice and possibly more heat, for example sriracha sauce. Serve with a little shredded green onion, chopped peanuts and a little fresh coriander on top.
