Cheesy lentil bake

Instructions

Step 1
Oil saucepan, adding carrot and onion. Stir on medium heat for 5m, adding garlic for last minute
Step 2
Stir in lentils, before adding a little stock, bring to boil. Keep adding stock bit by bit (only add more when absorbed, stirring so doesn't stick). Should take 15-20m to cook lentils and stock absorbed
Step 3
Heat oven 180c. Line oven dish with greaseproof paper
Step 4
Add 100g cheese and breadcrumbs, seasoning as you wish, stirring until cheese has melted and breadcrumbs disappeared.
Step 5
Place mixture into the dish pressing down gently. Sprinkle cheese on top
Step 6
Bake for 30m. Leave to cool and firm up a bit before lifting via baking paper out of the dish before cutting into slices
