Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

Heat 1 tablespoon of olive oil in a large oven-safe skillet or baking dish over medium-high heat. Add the diced chicken and cook until golden brown and cooked through (about 5–7 minutes). Remove the chicken and set aside.

In the same skillet, add the remaining olive oil and sauté the minced garlic for 1–2 minutes, until fragrant.

Stir in the heavy cream, chicken broth, Italian seasoning, garlic powder, salt, and pepper. Bring to a gentle simmer and cook for 2–3 minutes, until slightly thickened.

Add the cooked pasta, chicken, and optional add-ins (like peas or sun-dried tomatoes) to the skillet. Stir in 1 cup of mozzarella cheese and 1/2 cup of Parmesan cheese until melted and evenly distributed.

In a small bowl, mix together the panko breadcrumbs, Parmesan cheese, and olive oil. Sprinkle the mixture evenly over the top of the pasta bake.

Preheat your oven to 375°F (190°C) . Transfer the skillet to the oven and bake for 20–25 minutes , or until the topping is golden brown and the sauce is bubbly.
