Step 1
Preheat your oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat.

Season the chicken thighs with Creole seasoning, black pepper, salt, paprika, and thyme.

Sear the chicken thighs in the skillet until golden brown on both sides, about 5 minutes per side.

Remove the chicken and set aside.

In the same skillet, add chopped onion, bell pepper, and celery. Sauté until softened, about 5 minutes.

Add the roasted garlic, chicken broth, Worcestershire sauce, and bay leaf to the skillet.

Return the chicken to the skillet, spooning some of the mixture over the top.

Cover and transfer the skillet to the oven. Bake for 30-35 minutes, or until the chicken is cooked through and tender.
Step 10
Remove from the oven and let it rest for a few minutes before serving.
