Instructions

Step 1
1. Use a peeler or mandolin to slice the courgette length wise until you get lots of long strips.
Step 2
2. Add tofu, basil, nutritional yeast, lemon juice, onion powder, garlic powder, and salt to a food processor and blitz until you get something that resembles "ricotta".
Step 3
3. Place 2 courgette strips on top of each other and add a dollop of your tofu ricotta on one end. Roll ti up like a tiny sushi. Repeat until you're all out of everything!
Step 4
4. In a bowl, mix the chopped tomatoes with the garlic salt and dried basil before pouring it onto a small baking dish.
Step 5
5. Place your roll ups on top of the tomato mixture and bake in the oven at 180°C for 30-40 minutes or until it's nice and golden.
