Instructions
Step 1
Pat shrimp dry and place in a large bowl. Season with kosher salt, pepper, pinch red pepper flakes, dry herbs, 1/2 tsp of minced garlic, and Cavender's seasoning. Drizzle with extra virgin olive oil, and toss to combine. Set aside for now.

Step 2
In a large skillet, heat about 2 tbsp extra virgin olive oil over medium heat until shimmering but not smoking. Add the chopped onion and sautée until translucent.

Step 3
Add remaining minced garlic, cook briefly until fragrant (stir regularly.)

Step 4
Add shrimp and cook until pink while stirring occasionally. (5-7 minutes.)
Step 5
Add tomatoes, fresh oregano and dill (if you chose fresh) and cook to desired texture.

Step 6
Reduce heat to low. Add mint, parsley, lemon juice and additional seasoning to taste. Continue to cook until herbs are lightly wilted.

Step 7
Remove from heat and stir in feta and kalamata olives.

Step 8
Serve over rice, orzo or toasted peta bread.
