Instructions
Step 1
Dice onions, zucchini and peppers, thinly slice mushrooms and carrot, finely chop garlic, grate cheese, cut off part of the cheese rind, and crush tomatoes









Step 2
Cook onion, carrot, bell peppers and mushrooms in EVOO on medium-low heat for 8-10 minutes with seasonings












Step 3
Add garlic and tomato paste; cook until fragrant



Step 4
Add water, pecorino rind (optional) and tomatoes; bring to a boil while covered




Step 5
Add zucchini and pasta; simmer until pasta is al dente



Step 6
Add cream; mix well on low heat


Step 7
optionally grate pecorino romano on top
