BLTA STUFFED TOMATOES

TIPS & VARIATIONS • Buy tomatoes that are wider than they are tall so that they stand up easily. You can also arrange your tomatoes in a muffin tin to stand upright, or cut a thin slice off the bottom of the tomatoes to create a flat, steady base. • BLTA stuffed tomatoes are best fresh. However, if you want to make these a few hours or a day ahead of time, toss the avocado with a little lime juice before using in the recipe, to reduce browning.

Instructions

Step 1
Slice the tops off the tomatoes. Cut around the inside, then use a spoon to scoop out and discard the flesh. Flip over and set aside to drain.
Step 2
In a medium bowl, toss together the romaine lettuce, diced avocado, bacon, and ranch dressing.
Step 3
Use paper towels to pat the insides of the tomatoes dry. Stuff the tomatoes with the salad mixture so that they are heaping over the top. Sprinkle lightly with sea salt and black pepper, if desired.
