Instructions

Step 1
Rinse and wash rice in a small bowl until the water runs clear. Transfer to a small pot with water and salt. Bring to a boil, then reduce to a simmer. Let sit for 15 minutes, or until all moisture has evaporated.
Step 2
Meanwhile, wash cilantro and lime. Finely chop cilantro leaves, juice lime until you have about 2 tbsp.
Step 3
Once rice has finished and all water has been absorbed, add cilantro and lime. Gently stir to combine.
