A healthier spin on the carrot cake made quick and easy in your blender. If you’re ever in the mood for carrot cake but not in the mood for the all the extra sugar, you need to try this recipe. We also subbed in half the cream cheese for yoghurt to keep it healthier!

Ingredients
8 servings
for the carrot cake

3bananas

2eggs

1 ½ cupsrolled oats

½ cupwhey protein
or 1/2 cup oats

1 tspbaking powder

salt

1 tspcinnamon

1 tspvanilla extract

¼ cupmaple syrup

1carrot
medium, finely shredded

¼ cupwalnuts
chopped, optional
for the frosting
Instructions
Step 1
preheat the oven to 350°F and line a 8×4 inch loaf tin with parchment paper
Step 2
add all the ingredients except the carrots and walnuts and blend until smoothe, then stir in the carrots and walnuts
Step 3
pour into the lined tin and bake for 35-40 minutes or until a toothpick comes out clean. let the cake sit for 20 minutes before transferring to a rack to cool completely
for the frosting
Step 4
beat all ingredients together and spread over your cooled loaf, enjoy!
