Protein carrot cake

Ingredients

1egg
room temperature
1 cupbanana
mashed, about 2-3 bananas
1 cupcarrots
shredded
½ cupgreek yogurt
⅛ cupmaple syrup
½ tspvanilla extract
¾ cupwhole wheat flour
½ cuprolled oats
¾ cupvanilla protein powder
1 tsppumpkin spice
or cinnamon
1 tspbaking soda
2 pinchessalt
¼ cupraisins
¼ cupwalnuts
roughly chopped
⅛ cupmonk fruit sweetener
optional, or more maple syrup if you like it sweet
½ cuplow fat cream cheese
¼ cupcarrots
shredded
¼ cupvanilla protein powder
2 Tbspmilk
/ vanilla protein shake
1 tspmonk fruit sweetener
Optional, for added sweetness
Instructions
Step 1
Preheat the oven to 350 F.
Step 2
Prepare a loaf pan with parchment paper. (Check my stories and highlights for tips on this!)
Step 3
In a bowl add the mashed bananas, egg and vanilla extract, maple syrup, Greek yogurt and mix well.
Step 4
Add your carrots and dry ingredients and mix well before folding in the raisins and walnuts.
Step 5
Pour the batter into the loaf pan and smooth with a spatula.
Step 6
Bake at 350 F for 35-45 minutes or until a toothpick can be inserted into the center comes out clean.
Step 7
Blend all the frosting ingredients until smooth
Step 8
Let cake cool a bit before moving to a baking rack.
Step 9
After the bread cools Frost the bread with the cream cheese frosting and top with walnuts, shredded carrots and/or raisins as desired.
