Stuffed Bell Peppers with Rice, Veggies and Bround Beef

Ingredients
4 servings
4bell peppers
large, any color, tops cut off
0.5 lblean ground beef
½ cupwhite rice
cooked
0.5onion
small, finely chopped
½ cupdiced tomatoes canned
or fresh
½ cupspinach
finely chopped, or kale
¼ cupcarrot
grated, optional
1clove garlic
minced
1 tspltalian seasoning
½ tspsalt
½ tspblack pepper
½ cupshredded mozzarella cheese
fresh parsley
chopped, for garnish

Instructions
Step 1
Preheat the Oven: Set your oven to 375°F (190C).
Step 2
Prepare the Peppers: Slice the tops off the bell peppers and remove seeds. Lightly spray a baking dish and arrange the peppers upright
Step 3
Cook the Beef: In a skillet over medium heat, cook the ground beef with onion and garlic until browned. Drain excess fat.
Step 4
Mix the Filling: Add tomatoes, rice,
spinach, carrots, Italian seasoning, salt, and pepper to the skillet. Cook for 2-3 minutes until everything is heated through and combined.
Step 5
Stuff the Peppers: Spoon the beef and rice mixture into each bell pepper, packing it down slightly.
Step 6
Add Cheese & Bake: Top each stuffed
pepper with shredded mozzarella. Cover with foil and bake for 25 minutes. Remove foil and bake uncovered for another 10-15 minutes until cheese is bubbly and golden.
Step 7
Garnish & Serve: Sprinkle with fresh
parsley and serve warm.
