Onion Soup Bread

This savory bread is like a cheesy Irish Soda Bread, with all the flavors of French Onion Soup. It takes under 10 minutes to mix together and stick in the oven; no proofing or yeast required! You can use 2 envelopes, or a 2 oz (57 g) box of onion soup mix, or you can make your own mix (recipe below). I've done it both ways, and they both taste great (but only the former is free of added sugar and preservatives)

Homemade Mix
Dough

360gwhole wheat flour

⅓ cupvital wheat gluten

3gbaking soda

480gfat free buttermilk

1 cupshredded cheddar cheese

Instructions
Step 1
Preheat your oven to 350F, and lightly grease a 9x5" bread pan
Step 2
To make your own homemade onion soup mix, combine together dried onion flakes, onion powder, garlic powder, parsley, salt, and pepper. Alternatively, you can use 2 envelopes, or a 2 oz (57 g) box of onion soup mix






Step 3
In a large bowl, whisk together the whole wheat flour, vital wheat gluten, onion soup mix, and baking soda until well combined



Step 4

Pour in the buttermilk, and knead to get a dough. Knead in shredded cheese


Step 5

Add the dough to the pan, and shape to all sides. Optionally, top with more cheese (not included in nutrition facts)

Step 6

Bake at 350F for about 60 minutes, or until a toothpick comes out clean, and the internal temperature is at least 205F
Step 7

Let cool in the pan for 10 minutes before transferring to a wire rack. Let it totally cool before slicing
