Instructions

Step 1
Rub the fish with sesame oil and broil until flaky. 10-15 minutes, depending on fish thickness, distance from broiler, etc. etc. Just cook the darn fish 'till it flakes apart when prodded with a fork. (I have also fried in a pan and poached - all techniques work well - but I find broiling makes less of a mess).

For the sauce

Step 2
Add oil, chopped garlic, chopped chilies, lime juice, sugar, fish sauce, and coconut milk to a small saucepan and heat over low heat. You want to warm the sauce without boiling it.

Assemble the dish

Step 3
Once the fish is cooked, place it in a deep serving dish. Add the chopped cilantro and green onions to the sauce and pour the whole lot over the fish.
Step 4
Serve with steamed rice (use your pressure cooker!)
