Ingredients

For the Fajitas:
2portobello mushroom caps
large, sliced
1bell pepper
1red onion
1 Tbspolive oil
½ tspsmoked paprika
½ tspcumin
¼ tspchili powder
Salt
pepper

For the Avocado Crema:
Instructions
Marinate veggies
Step 1
* In a bowl, toss the portobello slices, bell pepper, and onion with olive oil, spices, lime juice, salt, and pepper.
Step 2
* Let sit for 10–15 minutes while you prepare the crema.
Make Avocado Crema
Step 3
* Blend avocado, yogurt, lime juice, and a pinch of salt until smooth. Add a splash of water if it's too thick. Set aside.
Cook Veggies
Step 4
* Grill on a grill pan or outdoor grill over medium-high heat for 3–5 minutes per side, or until veggies are tender and lightly charred.
Step 5
* (Alternatively, roast on a sheet pan at 425°F for about 20 minutes.)
Warm tortillas and assemble
Step 6
* Heat tortillas in a dry skillet or wrap in foil and warm in the oven for 5 minutes.
Step 7
* Fill each tortilla with grilled veggies and top with a spoonful of avocado crema.
Step 8
* Serve with a lime wedge and optional chopped cilantro.
