For the mango and banana ice cream
Instructions
Step 1
Put the mango and banana into a food processor and process until smooth. Put into an airtight container and in the freezer for until you finish the pancakes
Step 2
Place the yoghurt, flour, soda, egg and salt into a mixing bowl
Step 3
Whisk until the ingredients are combined (the batter will be thick and does not have to be smooth)
Step 4
Place the oil into a heavy bottomed frying pan and heat over a medium temperature.
Step 5
When hot, spoon 1 tbsp of the batter into the oil and fey until lightly golden
Step 6
Turn with a pallete knife and fey until golden
Step 7
Using a ice cream scooper, scoop the ice cream onto the pancakes and drizzle sauce on it.
