Ingredients
1 servings

2tortillas
large

1 ½ cupsmozzarella cheese shredded

3slices ham

2roma tomatoes
diced

1onion
small, diced

2 sprigscoriander
leaves removed

mexican hot sauce
Guacamole
Instructions
Step 1
To make guacamole, scoop out avocado flesh into a bowl. Smash avocado with fork and add bit of onion, bit of tomatoes, coriander, lime juice, salt, pepper, dried oregano and dried chilli flakes. Mix until combine and set aside.







Step 2
Heat up large frying pan on medium high heat. Add one tortilla into pan, sprinkle some mozzarella cheese all over tortilla, add ham, onions, tomatoes, extra mozzarella cheese and coriander before adding second tortilla on top. Press it down and let it cook for a few minutes.




Step 3
Check for bottom tortilla if lightly golden brown and if it is, carefully flip quesadilla to the other side and let it cook until other side is lightly golden brown and cheese is melted.


Step 4
Take quesadilla out of the pan, onto chopping board and cut quesadilla into 4 pieces, down and across with knife or pizza cutter.

Step 5
Plate quesadilla on serving plate, top quesadilla with guacamole and add few drops of Mexican hot sauce. Serve.
