Step 1
First let’s make the thai peanut dressing. All your powdered pb and sweetener to a bowl and mix to avoid clumping.
Step 2
Slowly add cold water and mix till you get a super thick pb consistency. Be careful because you have more liquid ingredients coming. Err on too thick.
Step 3
Add your soy sauce and rice vinegar to your pb mixture and mix till smooth.
Step 4
Season your shrimp with your blackened seasoning and then cook on 6/10 heat for 2-3 minute each side. They cook fast.
Step 5
Then build your salad and enjoy! *If you want to meal prep this, keep the dressing on the side until you want to have it!
