Ingredients

4 Tablespoonsolive oil

2white onions
Large, diced

2habanero chillies
Whole, seeds and all, finely diced

4 Heaped teaspoonsminced garlic

2green capsicums
Large, diced

2red capsicums
Large, diced

4carrots
Large, chopped

0.5 bunchcelery
large, chopped, leaves and all

1Whole cabbage
chopped, Chinese

4Bay leaves
fresh, double if using dry bay leaves

4 TeaspoonsCaraway seeds

4 TablespoonsWorcestershire sauce

2 Litreschicken stock
made 2 x stronger than the packet directions

2 x 400gcans Diced Tomatoes Basil & Oregano

1 bunchfresh basil
finely chopped

fresh oregano
15cm, leaves only, finely chopped

1 Packetbaby spinach
Instructions
Step 1
1. Add olive oil to a large saucepan over medium heat.
Step 2
2. Add onions and chilli and cook until onions are translucent about 10-15min (lightly salt the onions halfway through).
Step 3
3. Add garlic and cook until fragrant 1min or so.
Step 4
4. Add celery, capsicum and carrot cook until slightly soft, about 5min.
Step 5
5. Add the chicken stock, both cans of diced tomatoes and Worcestershire sauce, heat through.
Step 6
6. Add the cabbage, caraway seeds, bay leaves and lots of black pepper to taste. Simmer with the lid on until the cabbage is soft about 45min, stir occasionally to turn the cabbage into the broth.
Step 7
7. Add the basil, oregano and spinach, salt to taste.
