Instructions

Step 1
Preheat oven to 400°F. Pat the salmon fillets dry with a paper towel and season with pepper. Place on a parchment lined baking sheet. Whisk together the maple syrup, Dijon, and lemon juice and brush on the salmon. In a small bowl mix the avocado oil, pistachios, Panko, garlic, parsley and lemon zest together then spoon onto the fish. Gently press to adhere. For fillets less than 1" thick cook for 8-10 minutes, thicker than 1" 15-18 minutes or until the salmon flakes easily with a fork. Rest 5 minutes.
