Marinate the Chicken: In a bowl, whisk together the olive oil, white wine, 2 tablespoons of lemon juice, lemon zest, half of the minced garlic, crushed red pepper flakes, oregano, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. Add the chicken pieces and toss to coat thoroughly. Cover the bowl and refrigerate for at least 30 minutes, or up to 1 hour, to allow the flavors to meld.

Prepare the Coating: In a shallow dish, combine the whole wheat breadcrumbs, panko breadcrumbs, Parmesan cheese, garlic powder, and the remaining 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper. Mix well.
