Instructions

Step 1
Marinate the Chicken: In a bowl, whisk together the olive oil, white wine, 2 tablespoons of lemon juice, lemon zest, half of the minced garlic, crushed red pepper flakes, oregano, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. Add the chicken pieces and toss to coat thoroughly. Cover the bowl and refrigerate for at least 30 minutes, or up to 1 hour, to allow the flavors to meld.
Step 2
Prepare the Coating: In a shallow dish, combine the whole wheat breadcrumbs, panko breadcrumbs, Parmesan cheese, garlic powder, and the remaining 1/2 teaspoon of kosher salt and 1/4 teaspoon of black pepper. Mix well.
Step 3
Coat the Chicken: Remove the chicken pieces from the marinade, letting any excess drip off. Dredge each piece in the breadcrumb mixture, pressing gently to ensure the coating adheres well.
Step 4
Assemble the Spiedini: Thread the coated chicken pieces onto the skewers.
Step 5
Prepare for Baking: Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper for easier cleanup. Arrange the chicken skewers on the prepared baking sheet, ensuring they are not overcrowded. Drizzle the skewers lightly with the remaining 2 tablespoons of olive oil.
Step 6
Bake the Chicken: Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the coating is golden brown and slightly crispy. Flip the skewers halfway through the baking time to ensure even cooking and browning.
Step 7
Prepare the Light Lemon Garlic Drizzle: While the chicken is baking, melt the butter (or olive oil) in a small microwave-safe dish on High for about 10 seconds, or in a small saucepan over low heat. Stir in the remaining minced garlic and cook for about 30 seconds until fragrant (be careful not to burn it). Stir in the remaining 1 tablespoon of lemon juice and the fresh parsley.
Step 8
Serve: Once the chicken spiedini are baked, drizzle the light lemon garlic sauce over them and serve immediately.
Step 9
Tips for baking - Don't overcrowd: Ensure the skewers are spaced out on the baking sheet to allow for even cooking and browning. If necessary, bake in batches.
Step 10
Check for doneness: Use a meat thermometer inserted into the thickest part of a chicken piece to ensure it reaches 165°F (74°C).
Step 11
Broiling for extra crispiness (optional): For a crispier coating, you can broil the spiedini for the last 1-2 minutes of cooking, keeping a close eye on them to prevent burning.
